Securing an increasingly connected infrastructure

Latteria Soresina is one of Italy’s leading dairy cooperatives and a global reference in the production of Grana Padano PDO. The company combines tradition and innovation, maintaining strong ties with its local territory while focusing on sustainability and certified quality throughout the entire supply chain.

The introduction of new digital technologies, essential for optimizing internal processes and delivering new services to customers, has also opened up new cybersecurity risks.

Latteria Soresina therefore needed to design and implement a robust cybersecurity strategy, with a broader focus on protecting critical infrastructure.

Particular attention was paid to:

Risk and gap analysis to build a cybersecurity strategy

The project was developed within the framework of MADE Competence Center, of which Italtel has been a partner since 2021. The two organizations have collaborated on use cases involving industrial networking, OT Security and analytics solutions.

For Latteria Soresina, Italtel adopted a structured methodology to define and implement cybersecurity procedures and techniques for managing IT and industrial infrastructure.

The approach included:

• inventorying the technology assets deployed across the company’s facilities
• conducting a risk analysis against relevant industry standards
• carrying out a gap analysis against the project objectives
• supporting the definition of cybersecurity governance
• supporting the implementation of the action plan developed following the gap analysis.
